Is it just me, or is it odd to keep choosing the same lands arts again and again for 'special' treatments?
Yes, very odd. It's a mostly-reprint premium-priced set, they definitely could have splashed out on commissioning new art from these artists (Is poole dead? It occurs to me he may be dead).
It's not like these were particularly high value or chase basics, unlike something such as Guru or APAC/EURO.

Poole is only 59, and very much alive, pretty sure he's even still working.
but yeah, new art, or reimagine old art. I would pay dearly for a full art of the Lorwyn flower swamp. or Unglued basics reprint, both are better options than stuff that is hard to tell from what Dominaria Remastered (an amazing set, no knocking it at all) just had.

Project Booster Fun makes it less fun to open a booster.
I didn't miss it, I was disappointed to see her trash rear it's ugly head again.
Wow... That was totally uncalled for.
You certainly don't have to like every artist or their style (this also applies to musicians, actors, etc), but there's no reason to call her work "trash"!
I'm curious... What artistic talents do you have and do for a living?...data entry, insurance sales, scrub toilets, serve coffee, or something else which is trivial and requires little if any artistic skill? Y'know what?... it doesn't matter. Anyone who enjoys what they do and works hard at it to contribute to society, and support themselves and their family is still a winner in my books. Honestly, if you seriously think you can do better, maybe you should pick up some crayons, draw what you think is more impressive, and submit it to WoTC to see if they'll consider commissioning you for cards.
Back in the day, I'll admit I was never a fan of Drew Tucker's art, but in recent years I've been very impressed with his comeback and have a lot of respect for his continued efforts even if some of the art doesn't excite me or satisfy every player or card collector.
As for Rebecca Guay, she was never a personal favorite of mine either, but I recently bought a Serra the Benevolent playmat in addition to her secret lair drop and several copies of her wood elves promos (both arts) for commander as a show of support for her return because I respect and appreciate her work. If you don't like her artwork (or anyone else's), that's fine. Nobody is forcing you to buy or play with their cards, but please don't call them trash and show some respect. She's contributed a lot more to this game than you ever have.
I like Rebecca Guay's art, but I always hope they'd do a full art or borderless version of my favourite John Avon mountain I had on my old VI edition cards as a kid (the one from Mirage with the really really red mountain in a sunset). It looks so good.
Or my favourite island from Kaladesh. The really swirly one by Yeong-Hao Han
