I think it would explicitly say if you had to cover the dice or something to obscure the result. The trigger goes on the stack when you roll the dice, or realistically after you roll the dice since you can't mid-air suspend the dice to process the trigger.

A die roll is part of the resolution of another spell/ability (at least for anything I can think of) and so it creates a delayed trigger that is only placed on the stack after the triggering ability finishes resolving. The die result should be fully known and processed at that point before you decide whether or not to reveal to Priority Boarding.
