Man, the excerpt's phrasing between cards makes me think the cards are more likely to be fake (or, alternately, too early in the leak process to be final). The guy sounds full of himself and possibly not the type to verify the information they've been given...or they're trying to smooth-talk fakes past us. Kasmina and Jin-Gitaxias smack of fan cards in particular.

These seem believable, though.
Cascade lets you cast sorcery-speed spells on your opponent's turn. For more recent cards, so does Electrodominance.
Boy do I hope these are not real. Jin is extra gross and the instant speed draw + cheat a spell is stupid good. Not to mention I was really hoping for enemy colored factions with a cycle of duals to complete one of the several unfinished megacycles we have only allied pairs of.

Of course we cannot verify right now if this is legit, but all things considered these cards seem reasonably realistic so if they are not legit they're well invented.
Going through the different points:
The MDFC design seems very reasonable. Maro said that the execution of those is somewhat unique per set and that Strixhaven has a number similar to Kaldheim i.e. less than ZNR. Given these ideas and the fact that people will expect some kind of spells matter theme, having powerful figures with their spells on the back seems likely.
Kasmina is on point with typical blue stuff. Wizard tribal also seems plausible. Of course it is also easy to make something like this up. The static is somewhat like Nissa from ZNR. 4 loyalty for 5 Mana seems very much not out of the ordinary (Oko had it for 3). Indirect loyalty like from the 0 also isn't new (see M20-1RR-Chandra and Huatli). Removal on -3 is also typical. Now of course it's a double, but it's only creatures and probably you would often prefer exile / destructiction so it is not strictly better than the other variants. And remember that Oko had the removal on +1. One important point to notice is that while a planeswalker with the full package (tokens, card advantage, removal) is always playable, she needs a wizard tribal deck to realize her full potential, since she makes more loyalty and card advantage there and especially because the back side is a lot better there.
Quick aside on free casting: now this most probably a bad idea, but a) given last year's cards nobody will be surprised if there are new cards that miss the mark on the power level. And b) a "free casting" theme would fit thematically, so I don't see why it would be unrealistic.
This Jin-Gitaxias, if it's real seems like a candidate for a coming B&R announcement. Now, I don't play competitively, so maybe I'm off here, but if it is as broken as it looks that does not make it unrealistic given the recent mistakes that were published. It is very uninteractive (for the opponent) and free casting plus free countering seems a bit much. Otherwise the positive negative combination fits the existing praetors and flash / counterproof fits trample / haste of Vorinclex so looks reasonable.
Concerning the level up, Maro said that the basic concept was good but the execution was lacking. He also said that they might bring it back but only if they come up with a better execution. Borrowing from sagas seems like a good way to do so. Also, the professor suggested, and I agree, that level-up or experience seem like a good mechanical representation of learning. All this doesn't make it true (anyone who read Maro's articles could come up with the same conclusion and make it up) but at least there's nothing that seems very unlikely.
Concerning the enemy colored pairs: This is predeminantly based on the name Witherbloom which sounds very Golgari. I agree with that. But, so far the color pairs are also just speculative. And even if they're enemy colored this doesn't mean that there can't be some cards that are allied colored. ZNR and Kaldheim made sure that there were legendary creatures and sagas and snow doubles for each combination. So even if the main focus is enemy pairs, there could still be a rare Commander for each pair. After all WoTC needs to provide for the EDH clientele.
TL;DR: While there is nothing to prove the legitimacy of the leak there is also nothing that specifically strikes me as likely made up. Could be legit in my opinion. We'll see.

Previous level up cards have gotten strictly better (or nearly so) with every step. The one here gets worse in many situations when leveled from 2 to 3.

Jin-Gitaxis is not too strong here, its barely good for its counter ability.
You have to play 2 removal spells (or simply use a creature, planeswalker or any other card type to kill it, if you have to).
Yes, you could cast a counterspell for free to protect it and so on, but thats totally FAIR for a 7 mana dork, its supposed to be a win option (and if you are behind on the board at that point, its not really helping you much).
If a deck is so filled with spells that you have enough counterspells to sling around for free, then it seals the game for you (and in a set about wizards, i would expect a bunch of counterspells, maybe even give counterspells to non-blue colors in some degree and variations, its probably the set to go for something along that line).

Wording wise they are basically guaranteed to be somewhat off, but otherwise they look fairly believable as they resemble a lot of cards we already have.
Jin-Gitaxias, Core Augur is a pretty strong card that is similarly oppressive, albeit 10 mana, and 7cmc is sorta like the new 10cmc under FIRE. Also, it only counters the first instant or sorcery cast by you opponent - and we know under FIRE we're seeing an increase in Creatures that are spells. So I dunno, could be fake, but I don't think it's as unbelievable as people think. I mean look at the new Vorinclex - that card is nuts!!
Also, people had been predicting level up spells. We saw Hexdrinker is MH1, and MH1 did seem to be a place where they were testing out future design space (i.e. Snow), so I wouldn't be surprised if level up returns in this form.
I feel like last time there were leaks people had similar doubts: "What are the odds they leak the very cards we've been thinking about?!" But those all turned out to be true as well.
I hope that they are fake. That Jin-Gi is simply broken.

How i feel about competitive players and casual players in EDH: The competitive are german tourists, the casual are italian tourists, both in a italian beach. The italians asking themselves "why are the germans here?" make a legitimate question, the answer is because the beach is beautiful, no matter the country you came from. The italians wanting to ban the germans are dumb, because if the germans pay for their stay and follow the rules like everyone else, they have the right to be in the beach. Hovewer, if the germans started to ask themselves "why are the italians here?"... they would be dumb as hell.

I'm with you I love Level Up as well. Hope it is true. Level Up tickles that inner D&D player inside me. It would most surely make sense for the up and coming Forgotten Realms Core Set. Hopefully its getting a preview here.

There are definitely compelling argument to say it's fake but Jin-Gitaxias being broken is not one of them. With Oko, Uro and other stuff banned and the similar Vorinclex which is maybe not banned or even worthy of, this one seems very plausible unfortunately. Even if these are fake there's no way that there's not one or more cards that are almost as bad or worse than this.
I dunno.. spell half MDFC, a praetor, level up, wizards. Seems to me that these are the top speculations. Not disproving it of couse, but nothing leaked that is surprising or at least something not obvious to guess.

Honestly, genuine leakers do tend to be faster, or at least that's my memory of everything from the MTG New Phyrexian Godbook leak/Commander Legends picture leaks to the Pokemon Sun and Moon shiny mon models leaks to the Kirby-series Kirby Star Allies leak from the demo, the Kirby: Planet Robobot leaked English game, and arguably their OST rippers.
(Admittedly, there have been some leaks that read like they had one-shot, incomplete sources and therefore were more slow-rolled such as the Pokemon Sword and Shield Crown Tundra leaks.)
I see why people think Jin-Gitaxias is beyond what they would print, but mythic rare Praetors at cmc 7 are exactly the cards to see this kind of ability.
Also, as a personal preference, I hate level up as a mechanic and don't imagine it will come back because many others did not enjoy it either.
On the other hand, if it were ever to return, a school seems like a perfect setting.
I'm a bit confused by the lateral shift of the level-up causing the creature to become possibly/arguably worse.
I would not at all be surprised to see some ally-colored cards in the set. I have yet to see the source that says the set is enemy-colored. Some OP said it while quoting a source that didn't confirm it. Has there been any update on that? Do we know Lorehold is not white-blue?

because if that’s real you can cast a Eerie Ultimatum, Expropriate Primal Surge and time stretch like cards instantly
Plus it saids “each turn” rather than “each of your turns” so Leyline of Anticipation come into play for the sorceries
