The problem with defining this format by what is "fun" is that everyone seems to define fun as what they don't lose to. If you keep losing to easily answered cards, that means you should improve your deck. If you don't want to improve your deck, then you should come to peace with the idea that you are going to lose because you chose to not interact with better strategies.

That's false logic. Most EDH decks are multicolor, just because Thalia’s Geistcaller isn't in the most popular colors doesn't mean she can't be included. It's like saying Smothering Tithe is bad since it's artifact generation outside of blue/red. A good card will always find a home.
Besides, don't you think that's precisely why WotC wants to give white more power and versatility in EDH? I'm glad that WotC is moving away from their comfort zone and play out a Jeskai grave deck, it's much better than creating more powerful cliche within the overdone, overpowered blue/black/green color pie.
Would she work with Sigarda, Heron's Grace? I guess not since Sigarda's token making is on exile rather than cast. She has good flavor for my humans deck though so I can still squeeze her in there.

Because people are thirsty for broken cards that will fit into their current cEDH decks, unfortunately.

Pretty much. People prefer seeing cards that could add to their current deck rather than trying new ideas to pique their brain cells.
