With Ravenous Baloth, Gristleback, and Brindle Boar you have to sacrifice them or another creature to gain life. But Obstinate Baloth and Thragtusk gain you life immediately.
thats a good question, the next question is to ask why does it leave a 3/3 beast token whenever it leaves the battlefield. Are the beast tokens baby Thragtusk?
Perhaps you pick up some of the beast's tenacity or will to survive if you summon one. Or it knows some good places for food in the woods (it knows where that Natural Spring is ...).

Not all cards are designed with flavor as a main worry. obstinate baloth was designed to counter blightning. It was a Melvin design, not a Vorthos design. I assume thragtusk was the same, but for vapor snag.

The nearest explanation I have for the life gain is something akin to hunters' feast but even that is a stretch.
