Someone in my playgroup cast Rise of the Dark Realms getting several creatures including my Saffi Eriksdotter and another creature I owned. They claimed they could sacrifice Saffi targeting the creature I owned and that the creature would go to their graveyard and trigger before moving into my graveyard. Tried search up a ruling for this but there seems to be no evidence that it would trigger. Am I wrong?
Your opponent is wrong. There is never a time where a card you don't own will ever end up in your hand, graveyard, or library. In this case, your creature card will go from the battlefield directly to your graveyard when it dies, so Saffi will not trigger for your opponent.
To clarify: Saffi's ability can target any creature ("target creature"), not just a creature its controller owns (for that, it would have to say "target creature you own").

Sorry the title was a bit misleading, this was about the ability triggering. So opponent controls my creature and my saffi, targets my creature which he controls with the saffi but the graveyard trigger states 'Put into YOUR graveyard' and he was stating it is put into his graveyard and then statebased effects moved it into my graveyard.

As mentioned above, this is wrong, but even if a State Based Action did move it, then when Saffi's ability resolves, the creature card will have already gone to your graveyard and since it switched zones, Saffi's ability wouldn't be able to find it.
So, either way, your opponent will not get your creature when it dies in this case.
You opponent raises Saffi, then uses Saffi's ability. That ability only asks for a "target creature" with no further restrictions, so your opponent can target any creature they want.
However, Saffi's activated ability creates a triggered ability, and the trigger is "When target creature is put into your graveyard from the battlefield this turn", which puts some practical limits on what you'd want to target. If your opponent target a creature he or she owns, the ability will work as they'd hope. If they target a creature you own, the ability will never trigger, because "you" and "your" in Saffi's ability refer to the controller of the ability - a creature that you, Blubberburg, own will never go to your opponent's graveyard.
Yeah thanks for the replies guys this is what I thought was the outcome and I even looked up the Graveyard Comp rules and found nothing to say I was wrong.
400.3. If an object would go to any library, graveyard, or hand other than its owner’s, it goes to its

Also, you didn't say how the target would be sent to a graveyard, but one of the following might also be relevant:
701.6. Destroy
701.6a To destroy a permanent, move it from the battlefield to its owner’s graveyard.
701.14. Sacrifice
701.14a To sacrifice a permanent, its controller moves it from the battlefield directly to its owner’s
graveyard. A player can’t sacrifice something that isn’t a permanent, or something that’s a
permanent he or she doesn’t control. Sacrificing a permanent doesn’t destroy it, so regeneration
or other effects that replace destruction can’t affect this action.
