So say I have a creature, for the sake of examples birds of paradise, which has a tap ability. If I played this card on my turn one, and then my opponent plays his turn, can I tap my birds once it loses summoning sickness but before my untapped step? For example could I tap the birds to activate it's abiliry at the beginning of my turn, then untap it in my unap phase? Thanks!
Value is good. But Dredgevine isn't supposed to be about value. It's supposed to be about V-8; 2000 pounds of nitro boosted war vegetables. The more velocity, the better.

No. You don't gain priority to cast spells or activate abilities (like the Birds' mana ability) until the beginning of the Upkeep Step, that comes after the Untap Step.
The Untap Step is the very first step of your turn; there's no point in time where it's your turn (so the Birds aren't summon sick) but before the Untap Step.
