My opponent attacks with a Greenwarden of Murasa and a 4-power creature. After attackers are declared, I cast Turn Against, taking control of Greenwarden. I choose to block my opponent's 4-power creature with Greenwarden.
My question is: Who gets to choose a card from their graveyard to bring back to their hand? Greenwarden reads: "When Greenwarden of Murasa dies, you may exile it. If you do, return target card from your graveyard to your hand." The way I understand it, "you" refers to the controller. But Greenwarden will go to my opponent's graveyard, as they are the owner. Halp!

Correct. "You" is the controller of the ability, and the ability's controller is the player who controlled its source (the Greenwarden) when the ability triggers (when Greenwarden dies), and that's you.
112.8. The controller of an activated ability on the stack is the player who activated it. The controller of a triggered ability on the stack (other than a delayed triggered ability) is the player who controlled the ability's source when it triggered, or, if it had no controller, the player who owned the ability's source when it triggered. To determine the controller of a delayed triggered ability, see rules 603.7d-f.

True. But you still was its controller when it died, at the moment the ability triggered. For triggered abilities that trigger when a permanent leaves the battlefield, the game "looks back in time" for the last moment the permanent existed on the battlefield to see how it triggers, so what matters is who controlled the Greenwarden at the last moment it was on the battlefield, right before it went to the graveyard.
So you will choose a target card in your graveyard, and you will exile Greenwarden from your opponent's graveyard to get your card to your hand.
