If a player plays a Villainous Wealth and there is a Managorger Hydra or a Monastery Mentor in the exiled cards, will they still get +1/+1 counters or 1/1 Monk tokens? I don't think they would since they put all the spells on the stack and then would not be in play to receive the triggers.
Also, are the spells counterable? Do you resolve them during the resolution of the Villainous Wealth, or has the Villainous Wealth finished resolving once the cards have been exiled?
ex. Cast Villainous Wealth > Exile Cards > Put Villainous Wealth in the Graveyard > Put spells on the stack to resolve
-or-
ex. Cast Villainous Wealth > Exile cards > Put spells on the stack to resolve in order, no one can respond since the Wealth is still resolving > Put Villainous Wealth in the Graveyard

The cards are exiled when Villainous Wealth resolves, not when it is cast. Then you cast the exiled cards, and then VW goes to the graveyard, and later Hydra and Mentor eventually resolve.
They weren't on the battlefield when VW was cast, or even when each other was cast from exile, so no counters or tokens.
Also, are the spells counterable?
Sure. They are spells being cast, as you can see by how VW says to "cast" those cards.

A spell resolves when both players pass priority, and not at any other time. VW just has you cast them, they stay on the stack until VW finishes resolving (going to the graveyard) and the active player regains priority to respond to them or pass.

Player A Cast Villainous Wealth
Player A pass
Player B passes
Villainous Wealth starts resolving, exiling the cards. Player A casts some of the exiled cards, in any order A wants.
Villainous Wealth finishes resolving and goes to the graveyard.
Player A regains priority and pass.
Player B may respond to the spells or pass. If B passes, the spells that was cast last among them will resolve.
A spell or ability resolves when all players pass with that spell/ability as the topmost object on the stack. The spells you cast during Villainous Wealth's resolution don't also resolve during that resolution. The process goes: Cast Wealth -> let it start resolving -> exile the cards -> cast what you want, putting them onto the stack in any order -> put Wealth in the Graveyard -> players can make responses (including countering) before the spells start resolving.
All the spells cast during the Villainous Wealth go on the stack (in the order that the Wealth's controller chooses), but they wait to resolve until after the Wealth is done resolving. If one of those spells is a Managorger Hydra or Monastery Mentor, you could cast that one first, but it still won't get triggers from the rest of the cards cast off the Wealth, since those spells have already been cast.
