More specifically: Does Zealous Persecution's "until of turn, creatures you control get +1/+1" apply to all creatures regardless of when they enter play, so long as they enter before my end of turn?
My intuition is that it applies to creatures regardless of when they enter the battlefield, not just the ones that were there when Zealous Persecution resolves, but I figured I'd ask the experts

Playing with proxied cards at sanctioned events is good, actually.
Unfortunately your intution is incorrect. If a spell or ability affects the characteristics of a set of game objects it will only effect those game objects that qualify at the time it comes to resolve.
In this case as you have no creatures on the battlefield when Zealous Persecution comes to resolve nothing will get the bonus. And if you animate your manland after it has resolved it will only have its base stats.
