I have a Sultai Emissary in play and a Vulturous Aven in hand. At the end of my opponents turn, I cast Magma Jet and scry in such a way that would make the following interaction relevant:
On my turn, I cast Vulturous Aven exploiting Sultai Emissary. It appears to me that the Aven's "draw two cards, lose 2 life" and Emissary's "manifest the top card of your library" trigger at the same time. Is this correct? And if so, do I as the active player choose the order in which these two abilities go on the stack?

Playing with proxied cards at sanctioned events is good, actually.
Both abilities are waiting to go on the stack after the Aven's first trigger resolves. Since you control both triggers (being the active player doesn't matter. What matters is that you control both triggers), you get to choose the order they're put on the stack. SO you can choose whether you want to manifest first or draw first.
