I place the 'return a land to your hand' trigger on the stack first, then the two 'untap' triggers from the Amulets.
The first Amulet trigger resolves, untapping the Chancery. With the other triggers still on the stack, I tap the Chancery to add UW to my mana pool.
The second Amulet trigger resolves, untapping the Chancery. With the 'return a land to hand' trigger still on the stack, I tap the Chancery to add UW to my mana pool, for a total of UUWW now in my mana pool.
The 'return a land to your hand' trigger resolves, and I return the Chancery to my hand so that I can do this again next turn...or even this turn if there is a Rites of Flourishing on the battlefield.
Yes, this works. Amulet of Vigor and Azorius Chancery's triggered abilities can be responded to like any other, allowing you to tap the bounce land for mana if you stack the amulet's trigger on top of the land's trigger.

In EDH, I have an Amulet of Vigor on the battlefield and a Copy Artifact copying the Amulet of Vigor. I play an Azorius Chancery or any 'bounce land.'
I place the 'return a land to your hand' trigger on the stack first, then the two 'untap' triggers from the Amulets.
