Question regarding blocking. My opponent declares an attack and doesn't play anything afterward. Then, during the blocking step, I declare a blocker and in response, he uses a Doom Blade and destroys my blocker, is his creature still blocked because I already declared a designated blocker?
If he destroyed your blocker during the Declare Blockers Step, then his creature remains blocked. In order to ensure his creature remains unblocked, he'd have to destroy your blocker during the Declare Attackers Step.

If he kills one of your creatures during the Declare attackers step and you have an other live creature that can block, you can declare it as a blocker as the declare blockers step begins, and then your opponent's attacking creature is blocked until the end of combat and will not deal combat damage to you unless it has trample or a similar ability. So if you have two potential blockers, there is no way that your opponent can make sure his creature will go unblocked by removing only one of the two.
