Can you use Grimgrin, Corpse-Born's untap ability even if he's already untapped to put a +1/+1 counter (like how Lorthos, The Tide Maker or Frost Titan can tap something that's already untapped to prevent it from untapping), or is it more like the untap cards from Lorowynn/Shadowmoor?
Yes. His ability doesn't include a clause like "activate this ability only if Grimgrin is tapped." You can activate it any time you have priority and can pay the cost, and the ability will do as much as possible when it resolves (just adding a +1/+1 counter).

The difference between Grimgrin and the untappers from Shadowmoor is the on Grimgrin the untapping is part of the effect of the ability (the cost is sacrificing a creature), once oyu pay the cost the ability goes on the stack and when it resolves it tries to untap him which it cant and adds a counter.
The Shadowmoor cards on the other hand have untapping as a cost, which means you have to be able to untap them to activate the ability in the first place.
I thought so. Good to hear it works then, since it means he can be pumped as much as you want him to be using recursion engines like Gravecrawler. Good to hear it worked like I thought it did.
