I cast an evil twin. As it enters the battlefield, i choose to copy a grizzly bears. On my next turn, I cast a clone. As it enters the battlefield, i choose to copy the card that was once evil twin. I know the clone is now a grizzly bears, but does it have the evil twin 's tap ability?

It does. It copies the base card of evil twin, modified by any copy effects. Evil twin's ability that changes it to a grizzly bear and gives it the destroy ability is one big copy effect, so clone will get the destroy ability too.
