So I played a Wurmcoil Engine and on my opponent's turn he played Oblivion Ring I then respond with Altar's Reap. Does the ORing fizzle and go to the graveyard since the card he was targeting is no longer valid? He was trying to tell me that it stayed on the field, but didn't exile anything. It didn't really matter in the game; I was just curious.
What are you responding to? The Oblivion Ring, the Oblivion Ring's triggered ability, or are you casting the light after Oblivion Ring's ability has resolved?
If you cast it in response to Oblivion Ring, targeting Wurmcoil Engine, the controller of the oblivion ring will get to choose a different target for the ability, since the target is chosen when the triggered ability is put on the stack, after the ring has resolved.
If you cast it in response to the triggered ability targeting the ring, the engine will be exiled permanently. The return trigger will resolve before the exile trigger, and then the exile trigger will remove the engine.
If you cast it in response to the triggered ability, targeting the engine, the engine be exiled by altar's light, and the oblivion ring will stay in play, doing nothing. It's triggered ability will be countered for having only an illegal target. If the ring later leaves the battlefield, the ability won't return anything, because the first ability didn't exile anything.
If you cast it after the ring's trigger has resolved, you'll get the engine back.
It depends on specifically when you respond. Oblivion Ring is played and then, when it resolves, it triggers the exile ability. People will often shortcut it. If you respond to playing the Oblivion Ring, it will land and be able to target something else. If you respond to its trigger, it will fizzle and stay on the battlefield doing nothing. Either way it will remain on the battlefield though, since playing it doesn't require any sort of targeting.

That depends on what you mean by "respond with"; specifically, what you are responding to.
If you cast Altar's Reap while Oblivion Ring is on the stack, then when Oblivion Ring resolves, your opponent will be asked to select a target for Oblivion Ring's triggered ability. At this point, the creature you sacrificed isn't a legal target, so they will choose something else.
If you cast Altar's Reap while Oblivion Ring's triggered ability is on the stack (and Oblivion Ring is on the battlefield), then the target for that ability has already been chosen. If you sacrifice the permanent that ability targeted, then that ability will be countered on resolution. Oblivion Ring will remain on the battlefield, and if it leaves the battlefield, its other triggered ability will do nothing.

The OP is blowing up his own Engine not the Oblivion ring presumably before the triggered ability resolves so it goes to the graveryard.

Sorry to kind of jump in here, but I had a few questions about Oblivion Ring as well (or just exile and returning to play in general), and didn't see the point in making another thread.
If a creature gets exiled by Oblivion Ring and then Oblivion Ring gets destroyed by something like Naturalize, does the creature have summoning sickness? Or can it attack and tap the same turn it comes back to play?
And just double checking this one - when a creature returns to play after being O-Ringed, it triggers any enter the battlefield effects again, right? Like Phyrexian Ingester?

If a creature hasn't been on the battlefield since the beginning of the turn and does not have haste or some other modifying affect that states otherwise, then no, it cannot attack.
And yes, anything moving to the battlefield from a separate zone is considered entering the battlefield.
