How do Teferi, Mage of Zhalfir and Knowledge Pool interact? If I play Teferi, then play Knowledge Pool, can my opponent play spells still, or do timestamps mean that the Knowledge Pool rules supercede the Teferi rules?

Any spell your opponent casts from his hand will trigger the knowledge pool as normal and be exiled but he won't be abile to cast any spells during the resolution of the ability from knowledge pool
This is not a question of relative timestamps but a more simple case of an effect that says you can't do something (Teferi, mage of zhalfir) will always override and effect that says you may do something (knowledge pool allowing you to cast spells at odd times)

So... if it's my opponent's main phase (when they could cast a sorcery) and they cast something while I have Teferi + Knowledge Pool out, the spell they pulled from Knowledge Pool's exiled cards wouldn't resolve, even though Teferi says its a legal time for them to cast something?

Knowledge pool has you attempt to cast the exiled spell whilst its ability is on the stack and still resolving. Teferi will apply its effect to your opponents attempt to cast the spell at this time and say no you are in your main phase but the stack is not empty I will not let you cast a spell at this time.
The triggered ability from knowledge pool will then do as much as it can, exile the spell they attempted to cast and then do nothing else. They can't even chose a card they would like to cast from the cards that knowledge pool has exiled

Do note that the Pool+Teferi only stops your opponents from casting spells from their HANDS. If they cast a spell fromtheirlibrary, for example, the Pool won't trigger. The same is true of spells cast from the graveyard. It would also be true of cards cast from Exile, but Teferi shuts Suspend down pretty hard.

Panglacial Wurm cannot be cast from your library with Teferi on the other side of the table as there is most certainly a spell or ability resolving at that time.
The same reason holds true for suspend cards like Deep-Sea Kraken, you are attempting to cast it during the resolution of the suspend ability.
You are correct though, other effects that let you cast the spell normally but from a different zone are unaffected.
