The beginning of a step or phase (such as "your end step" or "your postcombat main phase") is a single moment in time, at the point that that step or phase begins. That's when an ability that triggers "at the beginning of" that step or phase can trigger (C.R. 603.2b). This happens even before players get priority to cast spells, even before triggered abilities go on the stack, and even before those abilities resolve (C.R. 503.1, 117.1a, 117.5, 117.4). Nothing you do during that step or phase will change whether that ability will trigger. Notably, if Sphinx of the Second Sun enters the battlefield during "your postcombat main phase" (after the beginning of that phase), its triggered ability won't trigger.

Your situation don't quite make sense. I can imagine no situation where you get the extra set of phases from your first sphinx and THEN get another main phase in the same turn as the sphinx only gets a second beginning phase after the second main phase.

You won't get another main phase after the extra beginning phase that the Sphinx gives you. As unusual as it may be, that extra beginning phase is directly followed by the end phase. The way you worded your question, you seem to have misread the Sphinx, in particular the fact that the extra beginning phase happens only after your postcombat (second) main phase.
I'm a former judge (lapsed), who keeps up to date on rules and policy. Keep in mind that judges' answers aren't necessarily more valid than those of people who aren't judges; what matters is we can quote the rules to back up our answers. When in doubt, ask for such quotes.
