If I play this on Zada, Hedron Collider, I understand each of the other 6 creatures also get +4/+3, but my questions is because these copies are being cast, do I also do 14 x 2 damage to each opponent because of my 2 Guttersnipe Goblins?
I guess it is a two part, do both Guttersnipes abilities "trigger" and also .. does each "copy" made from Zada, Hedron Grinder count as a new spell for the sake of Guttersnipe hence the 7 x 2 x 2 damage?

No. The copies are NOT being cast, they are created directly on the stack, and Guttersnipe doesn't trigger for any of them.
Copies of spells are created directly on the stack, without being cast, while copies of cards are created in the zone the original is in. With instant cards and sorcery cards, you are then usually given opportunity or outright instructed to cast the copies, which does trigger Guttersnipe.
Let's say I have the following situation
Let's say on the Battlefield I have
Zada, Hedron Grinder
2 x Guttersnipe
4 x Goblin
And in my hand I have Antagonize
