If my opponent casts Incriminate and chooses 2 creatures (I only have 2), and then I cast spell to sacrifice one- when his spell resolves there is only one target creature left. Does it fizzle or does it automatically sac the remaining creature? Thank you for the ruling

A spell will only fizzle if all targets are illegal at the time of resolution. If at least one target remains then the spell will continue to resolve and do as much as it can. In this case if only one target is left then you'll sacrifice that one creature.
