If Sphinx of the Second Sun triggers at the beginning of postcombat main phase, does it mean if I manage to gain an extra combat phase the Sphinx would trigger again?

It depends.

While each main phase except the first one is considered a post-combat main phase, some additional combat phase granting effects also produce an additional main phase and some do not.

Compare aggravated assault with Aurelia, the Warleader.

Effects such as Assault will allow Sphinx to trigger again, Aurelia will not.

Along the same question: The ruling says, "After the additional beginning phase, the game proceeds to the ending phase." Does it mean I don't get to utilize my second main phase?

And what happens if I have two Sphinxes?

After an additional beginning phase is added due to Sphinx of the Second Sun, it will still be the postcombat main phase. However, after that main phase ends, a beginning phase will take place, followed by the ending phase (C.R. 500.8).

If you get two beginning phases after the same postcombat main phase (perhaps because you control two Sphinx of the Second Sun permanents), then after that main phase ends, both beginning phases will take place, one after the other, followed by the ending phase (C.R. 500.8).

You already utilized it, before the additional beginning phase.

500.8. Some effects can add phases to a turn. They do this by adding the phases directly after the
specified phase. If multiple extra phases are created after the same phase, the most recently created
phase will occur first.

• beginning phase
• precombat main phase
• combat phase
• postcombat main phase
• additional beginning phase (from second Sphinx resolution)
• additional beginning phase (from first Sphinx resolution)

Thank you, I got the order wrong then. I thought I get the beginning phase right as the second main started. Thank you!
