I'm wondering how burnt offering works with X costed creatures. Like lets say I played a lightning serpent and dumped all my mana but one black. Can I then burnt offering it in my second main phase to essentially get my mana back to play something else in my second main?
No, when an effect looks at the casting cost of a spell with X everywhere but the stack the X is treated as 0. So a Lightning Serpent will only get you 1 mana from a Burnt Offering.

Cool, thanks - the rules seem very clear on the matter. It just seemed odd to me that I could do something like cheat out a blightsteel colossus
with Purphoros, bronze-blooded then get 12 mana out of it with a burnt offering but couldn't get mana back out of a creature I actually paid full cost for.
