If True-Name Nemesis has protection from player A then dies, triggering Rayami, First of the Fallen, does Rayami still gain protection from player A? On that note, will Rayami gain abilities that are chosen upon entering the battlefield? For example, Voice of All having protection from white dies. Will Rayami gain protection from white?

Note that "True-Name Nemesis has protection from the chosen player" is not even a protection ability (C.R. 113.2c; review C.R. 702.16), and that ability functions only on the battlefield (C.R. 113.6), so even if True-Name Nemesis is one of the "exiled creature card[s] with ... blood counter[s] on" them, Rayami wouldn't have that ability due to its last ability.

What about with Spirit of the Night? It has a conditional first strike. Will Rayami also get the conditional first strike or no first strike at all?
Similarly to True-Name Nemesis, "Spirit of the Night has first strike as long as it's attacking" isn't the same as first strike for the purposes of Rayami's second ability (C.R. 108.1). Similarly, Mystic Visionary doesn't have flying while it's not on the battlefield despite its ability "Threshold — Mystic Visionary has flying as long as seven or more cards are in your graveyard" (C.R. 108.1), since that ability functions only on the battlefield (C.R. 113.6). How is it not a protection ability? 702.16j: “Protection from [a player]” is a variant of the protection ability...
The fact that TNN's protection is linked to the choice made as it enters the battlefield means nothing is chosen while it's in exile, obviously, but it's still protection.

"True-Name Nemesis has protection from the chosen player" is an ability that expresses a continuous effect that grants another ability, namely "protection from [the chosen player]" (C.R. 113.1a, 611.1), and so is not a protection ability itself. The ability "True-Name Nemesis has protection from the chosen player", as well as its continuous effect, works only while True-Name Nemesis is on the battlefield (C.R. 113.6, 611.3b). (It's not a characteristic-defining ability, which works in all zones, because it doesn't "defin[e] an object's colors, subtypes, power, or toughness" [C.R. 604.3a, 604.3].)
