so bear with me, this feels a bit wrong, so i wanna make sure i got this right. When looking up what a trigger is, i found this:
603.1. Triggered abilities have a trigger condition and an effect. They are written as “[When/Whenever/At] [trigger condition or event], [effect]. [Instructions (if any).]”
painter says "As painter..." not "whenever" or "when" or "At", the defined trigger words. So do i choose a colour if i cast a painter with torpor orb in play? since torpor orb only looks at triggers, and not whatever 'as' abilities are?
My (non-judge) conclusion is that i do, simply because it says "as".
Painter's Servant has no triggered abilities, because no word 'when', 'whenever', or 'at' is used.
The rules reuse square brackets to generalize pieces of text, but both through description (as the other three pairs in that rule), or through enumeration (as in the first one).

so that means I'm right, right? i get to name a colour when painter enters play?

Absolutely, Torpor Orb does nothing to stop what Painter's Servant does, since it doesn't involve a triggered ability.

I'm a former judge (lapsed), who keeps up to date on rules and policy. Keep in mind that judges' answers aren't necessarily more valid than those of people who aren't judges; what matters is we can quote the rules to back up our answers. When in doubt, ask for such quotes.
So this might be a bit strange to ask, but what sort of ability does painter have then? Is there a collective name for abilities that says “as [condition], [effect]”?

In general, an ability of the form "As [event], ..." (e.g., "As Vesuvan Shapeshifter enters the battlefield or is turned face up...") is a static ability, many of which express replacement effects (C.R. 604.1, 614.1; see also C.R. 614.1c, 614.1e).

There are four types of abilities in the game : activated abilities, triggered abilities, static abilities, and spell abilities.
Spell abilities are the main text on instant and sorcery cards, they're the instructions you follow as such a spell resolves; they're seldom talked about, because players don't interact with them in isolation, rather they always interact with the spells they're on.
If an ability of a permanent is neither activated (of the form [cost]:[effect]) or triggered (starting with "when, whenever, or at"), then it is classified as static. Some static abilities generate replacement effects, which modify an event as it happens. The color-choosing ability on Painter's Servant is one of those: it modifies the event of the Servant entering the battlefield such that a color is set as it enters, so it never exists on the battlefield without a color chosen.

edit: Only triggered abilities "trigger" or need to "trigger". So Torpor Orb doesn't change how rules apply to Painter's Servant.
