Ok if I cast fumbleon my opponents creature that has a bestow aura enchantment like chromanticoreattached to it, will I get to attach chromanticore to one of my creatures or will it immediately become a creature under my opponents control since it will no longer be attached to his creature once I cast fumble targeting it?

The bestow effect will wear off during the resolution of Fumble. (This isn't a triggered ability or state-based action, so it doesn't need to wait for Fumble to finish resolving.) It then won't be an Aura for the next sentence of the effect.
702.102a Bestow represents two static abilities, one that functions while the card with bestow is on the stack and another that functions both while it’s on the stack and while it’s on the battlefield. “Bestow [cost]” means “You may cast this card by paying [cost] rather than its mana cost.” and “If you chose to pay this spell’s bestow cost, it becomes an Aura enchantment and gains enchant creature. These effects last until one of two things happens: this spell has an illegal target as it resolves or the permanent this spell becomes, becomes unattached.” Paying a card’s bestow cost follows the rules for paying alternative costs in rules 601.2b and 601.2f–h.
701.3d To “unattach” an Equipment from a creature means to move it away from that creature so the Equipment is on the battlefield but is not equipping anything. It should no longer be physically touching any creature. If an Aura, Equipment, or Fortification that was attached to an object or player ceases to be attached to it, that counts as “becoming unattached [from that object or player]”; this includes if that Aura, Equipment, or Fortification leaves the battlefield, the object leaves the zone it was in, or that player leaves the game.

Why bother with mere rulings when so many answers can be found in the Rules?
Here's a different scenario about triggering, if I play innocent blood which causes each player to sacrifice a creature, my opponent has two creatures on the battlefield, AS HE CHOOSES one of his creatures to sacrifice, can i then play my flash minion's return onto that creature therefore making it return to my battlefield? Or can he choose his other creatures to sacrifice? Innocent blood does not actually target any creature but as he CHOOSES a creature to sacrifice, does that go on the stack and therefore I have the option of flashing minions return? Or is there no stack bc it doesn't target everyone just chooses a creature?

Once a spell starts to resolve no player gets the ability to cast spells or activate abilities unless the spell specifically mentions it (like if it asks for a mana payment you can tap lands) so you cannot respond to their choice by flashing in Minion's Return. You will have to cast Minion's Return before innocent blood resolves, but at that point the opponent will know before they make a choice of course.
