- Given the DArcanist's power I can legitimately cast CaCourse from my graveyard.
Here's the tricky part, do I get to just draw two cards since basically I've already attacked (or in the act of attacking)? or do I still get to discard a card, assuming that CaCourse was intended to be cast during the second main phase (after I have finished the act of attacking)?

In this scenario, assuming you've attacked with just Dreadhorde Arcanist, by the time Dreadhorde Arcanist's ability even triggers, you will have already finished declaring attackers (C.R. 508.1m). Thus, for the purposes of Chart a Course, you have "attacked with a creature this turn". See also this thread.
In general, a player has "attacked with a creature" if they've declared at least one creature as an attacking creature (so that in general, they don't discard a card due to Chart a Course if that spell resolves during the declare attackers step or later in the turn) (C.R. 508.1a, 508.1j; see also C.R. 508.6), but not merely if a creature they control enters the battlefield attacking (C.R. 508.4).
