Sure, that's all totally legal. You won't be able to do it in a main phase so no sorcery speed stuff but you can do it with instants/flash. There is a standard deck that uses Wilderness Reclamation in much the same way to float mana off the untap trigger in the end step to cast large instants.
With 5 creatures dealing combat damage to a player, and Derevi caring only about "a creature", you get 5 triggers, since the trigger event occurs 5 times. You can respond to all of them andn in between by tapping the land that is going to be unapped by a later resolving trigger, yes. You have to target the land up front, though, since targets are chosen when a trigger is put on the stack and all the triggers go there at the same time. So even if you only had 1 land, you can get 5 additional mana out of it this way.
Yep to everything. After every trigger you get to take actions so you can retap lands or cast a spell before moving phase and emptying the mana pool

If at least one of those lands is an Island and your attackers are able to get through to the defending player, you can certainly do that during your combat damage step. (If only one is an Island, you will have to make a point of targeting it with at least one of the triggers.)
603.2c An ability triggers only once each time its trigger event occurs. However, it can trigger
repeatedly if one event contains multiple occurrences.
Example: A permanent has an ability whose trigger condition reads, “Whenever a land
is put into a graveyard from the battlefield, . . . .” If someone casts a spell that destroys
all lands, the ability will trigger once for each land put into the graveyard during the
spell’s resolution.

Sure, why not? For this sequence, I'll suppose you have three untapped basic lands consisting of an Island, a Plains, and a Forest, and that your Derevi is one of three unblocked attacking creatures with power greater than 0.
Your combat damage step begins. You assign 2 damage from your unblocked Derevi to the defending player, and whatever amounts of damage from the other attacking creatures (which I will call A2 and A3) the same way.
Combat damage is dealt. Derevi deals 2 combat damage to the defending player, triggering its ability. A2 deals some combat damage to the defending player, triggering Derevi's ability. A3 deals some combat damage to the defending player, triggering Derevi's ability.
You would get priority, but there are triggered abilities to put on the stack. You control all three, so you choose the order. A) For the combat damage dealt by Derevi, you put "Whenever Derevi, Empyrial Tactician enters the battlefield or a creature you control deals combat damage to a player, you may tap or untap target permanent." on the stack targeting your Island. B) For the combat damage dealt by A2, you put "Whenever Derevi, Empyrial Tactician enters the battlefield or a creature you control deals combat damage to a player, you may tap or untap target permanent." on the stack targeting your Island. (Your Island is a permanent, and there isn't any sort of "not the target of something else" restriction.) C) For the combat damage dealt by A3, you put "Whenever Derevi, Empyrial Tactician enters the battlefield or a creature you control deals combat damage to a player, you may tap or untap target permanent." on the stack targeting your Island.
You get priority and activate the "T: Add U" ability of your Island. You pay the cost by tapping the Island, and it resolves.

You get priority and activate the "T: Add G" ability of your Forest. You pay the cost by tapping the Forest, and it resolves.
