Am I correct to assume that the token will be a black 4/4 Zombie Gatstaf Shepherd without a backface and thus unable to transform? Tokens are permanents.
Tokens do not have a back face, and cannot transform, because they're not double-faced cards.

The card in the graveyard is neither a token nor a permanent, which is what I was refering to. The examples listed in the rules page only had cards copying permanents.
The Scarab God makes a copy of the card, and since the card is not on the battlefield, much less transformed, when it is copied, the only set of characteristics available for that is the front face. Because outside the battlefield the back face is treated as nonexistent by the game. And as Horseshoe_Hermit said, tokens aren't card, certainly not double faced ones, so they cannot transform, even if they somehow could end up with back face (which is currently impossible as far as I know).

110.5e A token is subject to anything that affects permanents in general or that affects the token’s card type or subtype. A token isn’t a card (even if represented by a card that has a Magic back or that came from a Magic booster pack).
Tokens are permanents.
