Hi, got some questions. Need to be sure about these to be a bit better on using the amulet.
1. If I use a Quicksilver Amulet to make Jin-Gitaxias Core Augur enter the battlefield on my opponent's end step. Do they discard their entire hand because of Jin ability?
2. My opponent's turn, they attack with all their creatures. Can I use amulet to etb a Blazing Archon and ask opponent to untap their attacking creatures go back to their main phase?
3. Against Burn. Opponent cast a lava spike, can I etb an Iona, Shield of Emeria with amulet to stop the lava spike from resolving?
Notes: Iona's name fixed for tags to work. -MadMage
1. If your opponent's maximum hand size was otherwise 7 or less, then Jin-Gitaxias will reduce that accordingly to 0 or less, so that that opponent must discard all cards in hand during their cleanup step (C.R. 514.1).
2. Effects that keep creatures from attacking (either generally or under certain circumstances), such as found in Blazing Archon, don't affect creatures that are already attacking; such creatures aren't removed from combat (see also C.R. 506.4a). If you want to use Blazing Archon to keep creatures from attacking you, you have to have it on the battlefield before the declare attackers step. If your opponent is in their first main phase and seeks to move to that step, then this is a shortcut that you can interrupt at the appropriate point to bring Blazing Archon onto the battlefield with Quicksilver Amulet (C.R. 500.2, 720.2a-c; for sanctioned tournaments, see M.T.R. 4.1).
3. After Lava Spike is cast, bringing Iona onto the battlefield and choosing red for it won't counter Lava Spike or otherwise remove it from the stack. In general, an effect, such as found in Iona, that would keep one or more players from casting spells (either generally or of certain kinds) don't affect spells that were already cast (this applies to Iona as much as it does to Dragonlord Dromoka or Silence — see also this thread and this thread.)

The part about the archon still confuses me a bit. Because most people in our lgs do the shortcut of tapping creatures to attack without declaring attackers vocally. So when they start tapping creatures, that's the time I stop them and amulet the archon into play?

When any kind of short cut is proposed you are able to ask your opponent to stop at any point in their proposed short cut. So if they draw their card and then immediately tap their creatures to attack, you can tell them you are stopping at any point prior to the declare attackers step and activating abilities or casting a spell. Typically the stop is in the Beginning of Combat step.

Yes, that's when you can do that. If you state that you will activate Quicksilver Amulet's ability (or do something else) before your opponent attacks, then the attack is interrupted and the game goes back to a point when you can activate Quicksilver Amulet's ability (or do that something else) (C.R. 500.2, 722.2a-c; for sanctioned tournaments, see M.T.R. 4.2).

If for example there's a creature an opponent controls that I want to surprise block and kill.. would making the archon etb with the amulet after they have finished declared attackers step.. allow their creature to still attack and therefore become blocked and killed by the archon?

If you actually passed priority such that the game passed to this step, then Blazing Archon entering the battlefield won't remove any creatures from combat; its static ability is not retroactive. user and peteroupc were talking only specifically about interrupting an opponent's proposed shortcut.
Yeah, on interrupting the shortcut. I was asking how the archon could stop their creatures from attacking.
But on this last question, I am intentionally pass priority for them to finish the declare attackers step to allow the creature to get through the archon ability, because I wanted to block and kill something. Ok, so I guess it works. ^__^
