Ive looked all over. Does targeting a creature’s type, count as targeting the creature? Can unnatural selection change a shroud/hexproof creature’s type?
Unnatural Selection
No, shroud and hexproof do prevent the creature from being targeted. The word "target" is immediately followed by the word "creature." It targets a creature. The official oracle text is more clear than the printed text:
"1: Choose a creature type other than Wall. Target creature becomes that type until end of turn."

One target, one creature's type changes. If it did otherwise, it would say otherwise.
