Let's say that I have Scion of the Ur-Dragon and Arcane Adaptation in play. If I then activate Scion and target Dragon Tyrant and then in respons target Vector Asp. First Scion becomes a copy of the Vector Asp, then I activate its ability to gain infect, and then it becomes the Dragon Tyrant. Would it then be a Dragon Tyrant with infect?
Assuming Dragon was chosen for Arcane Adaptation, this works. This is because copying an object (as Scion of the Ur-Dragon's activated ability does) doesn't override other effects on that object (including effects that give that object new abilities), with the exception of other copy effects and other exceptions not relevant here (C.R. 706.2) — effects that make a permanent a copy of something (such as with Scion of the Ur-Dragon) is in layer 1 (C.R. 613.1a), while the effect giving that permanent infect is in layer 6 (C.R. 613.1f). Thus, Scion of the Ur-Dragon will become a copy of Dragon Tyrant and still have infect.
Note, however, that Scion of the Ur-Dragon's ability doesn't target anything, especially not cards in a library (C.R. 114.1c, 114.10, 114.10a).
