The triggered abilities of Knotvine Paladin and Ledev Champion trigger at the same time, when their sources attack, so they go on the stack at the same time (C.R. 508.1m, 508.2, 116.5). Since you control both creatures, you choose the order they go on the stack (C.R. 112.8, 603.3b). Knotvine Paladin's ability checks which creatures are untapped creatures you control when it resolves (C.R. 608.2g). See also this thread.

If you attack with the creatures and tap them on the resolution (activation?) of Ledev Champion's ability, they are going to be removed from combat anyway (excepting any on attack triggers).
Tapping or untapping a creature does not remove it from combat nor does it prevent its combat damage. Vigilance in this scenario allows for attacking and getting a bigger power/toughness boost, because you can still tap the attacking creature for something other than attacking.
(Ledev Champion's first ability is a trigger, so it triggers whenever its condition is met. The second ability is an activated ability, so it must be intentionally activated.)

This is incorrect. Tapping or untapping an attacking or blocking creature does not remove it from combat or prevent any damage. If you tap an already attacking creature, it will still be attacking.
