So lets say my opponent uses Dawn of Hope to summon a guy after attackers are declared but before blockers step. I assume I can destroy it before blockers, no? I ask cause i tried doing this in MTGArena, and despite trying my best, being aware of button queues and continuously putting on full control, the game allowed the soldier to resolve and block before i had a chance to assassins trophy it.

Certainly. The sequence would go something like this:
Your combat phase begins. Beginning of combat step begins.
You get priority and pass.
Opponent gets priority and passes.
Beginning of combat step ends.
Declare attackers step begins. You declare Golgari Findbroker as an attacker and tap it.
You get priority and pass.
Opponent activates the "3W: Create a 1/1 white Soldier creature token with lifelink." ability of Dawn of Hope. Opponent pays the cost using 3W obtained in an unspecified way.
Opponent gets priority and passes.
You get priority and pass.
The top object on the stack (the ability activated in step 7) resolves. Opponent creates a 1/1 white Soldier creature token with lifelink.
You get priority and cast Assassin's Trophy. You choose opponent's new creature token as the target. You psy the cost using BG obtained in an unspecified way.
You get priority and pass.
Opponent gets priority and passes.
The top object on the stack (the spell cast in step 11) resolves. You destroy that creature token, putting it in opponent's graveyard.. The opponent gets the option to search their library for a basic land card, etc. Presumably, they do so. Assassin's Trophy goes to your graveyard.
You would get priority, but there is a state-based action to process. The token in opponent's graveyard ceases to exist.

Thats what I thought, guess Magic Arena isn't coded to let that work then or is a bug, I'll make sure to report on it then, thank you for the confirmation!

Yeah, keep in mind it is still in beta. Bugs like this are bound to come up. It is strange though that it wouldn't allow you to do that, as the game forces you to click a button to continue the turn whenever you have an instant you can cast with valid targets. It might be a coding issue specifically with Assassin's Trophy.
Not to continue bumping a solved thread, but just letting you know how it went down, basically swung in with like 6 mana open, had lethal, knew about the dawn, so I figured if that was his only out, i would let it pop, then before blockers assassins trophy it.
But, after declaring my attacks and letting the effect resolve, i expected the game to stop and say yellow button 'blockers', thus allowing me to kill creatures with instant speed stuff, but instead it auto passes like it does when the game thinks you either passed priority or have nothing to play, and he was able to immediately block. Literally cost me that game cause he was control and stabilized at 1 life, felt bad, (still won the match though)

The game was made with the by-default assumption that players usually pass at this point.
There are some settings you need to modify in order to enjoy priority in this specific moment.

But i already disabled all auto features AND I put on full control just in case during scenarios like these,
