Do I get my bears back since the Merfolk Trickster has nullified the Banisher Priest's ability? Or does the exiled creature stay in exile?

Due to Banisher Priest, Grizzly Bears will be exiled "until Banisher Priest leaves the battlefield"; in general, Grizzly Bears won't return sooner, even if Banisher Priest loses its abilities (C.R. 610.3).
No. This play has essentially no effect. The Priest simply has a triggered ability with a duration. Only it leaving the battlefield will cause the Grizzly to reenter.

Things would be different if your opponent used old-style banishing cards, like Detention Sphere for example, which had two abilities, one for exile, one for return. Removing its abilities and then destroying the sphere would cancel the return of exiled cards.
