I am curious how damage works. The thing is if My opponent swings with Skithiryx, if I do no block, I would get poison counters, so skittles has just done damage in the form of poison counters. However, all damage that would be done to me is instead transferred to the pariahed creature, in this case skittles. Since he did damage in the form of poison counters and not -1/-1 counters, i am curious. Would Skittle die to this, or would the poison counters transfer to skittles and have no effect?
It is more of a curious effect of redirection of damage. Since the damage is in the form of poison counters, does it change to -1/-1 in the event of infect? or is it a weird loophole in which I cannot die nor would the pariah creature kill itself.
The damage that Skithiryx would deal to you is instead dealt to Skithiryx. Since Skithiryx, the recipient of the damage, is a creature, and Skithiryx, the source of the damage, has infect, this damage dealt in the form of -1/-1 counters.
The way that the infect source would deal damage to the thing that it isn't dealing damage to is not relevant.

If Skithiryx is enchanted to a Pariah you control and would deal damage to you, Skithiryx will deal the damage to itself instead, rather than to you (C.R. 614.6, 109.5). Since Skithiryx has infect and is a creature, it deals the damage to itself in the form of -1/-1 counters (C.R. 120.3d). The fact that it would have dealt damage to you in the absence of Pariah is irrelevant.

Does prove to be an issue with one strategy i had against a Blightsteel. I mean, it still gets rid of blightsteel, but, that also means that the indestructible shield no longer helps.

Again, if Skithiryx is enchanted to a Pariah you control and would deal damage to you, Skithiryx will deal the damage to itself instead, rather than to you. This is the case regardless of whether Skithiryx has infect or some other ability that changes the form of the damage Skithiryx would deal. In the case of Blightsteel Colossus, if its toughness is brought to 0 or less (whether by -1/-1 counters or otherwise), it will go to the graveyard as a state-based action (C.R. 704.5f) (and, due to its last ability, be revealed and shuffled into its owner's library instead) — indestructible won't help since it won't be destroyed this way (review C.R. 702.12a).
