If I play Hunted Wumpus cards, is there ever a time where I can flash in Mistcaller to exile my opponent's creatures after theyve decided what to play but before they can back out?
It's when Hunted Wumpus's ability resolves — and not before then — that "each other player" chooses which creature card, if any, they put onto the battlefield (C.R. 603.5, 608.2c). And while the ability resolves, no player has priority to cast spells, such as Mistcaller (C.R. 116.2e, 116.1a).
In any case, since the creature cards put onto the battlefield with Hunted Wumpus enter at the same time, "each other player" decides which card, if any, to put onto the battlefield this way in active player, nonactive player order (C.R. 101.4) — but in this case, such a card "may remain face down as [it's] chosen" but must still be "clearly indicate[d]", as cards are to be chosen from each relevant player's hand, a hidden zone (C.R. 101.4a, 400.2).
Finally, note that Mistcaller doesn't have flash, so you are limited on when you can cast it compared to instant spells (C.R. 116.1a; review C.R. 702.8a).
