My opponent controls azcanta, the sunken ruin. I attempt to destroy it with field of ruin. They respond by activating it. After they finish resolving the activation, does priority return to me with the field still on the stack? In other words, can I respond to my own field activation while it's still on the stack? Does it matter who's turn this is happening on? Do I have to explicitly state that I am holding priority at some point in this sequence?

If you mean Azcanta's first ability ("T: Add U"), that's a mana ability, so in this scenario, that ability will resolve right after it's activated and give priority back to your opponent (C.R. 605.1a, 605.3b, 405.6c).
If you mean Azcanta's second ability ("2U, T: Search..."), that ability will go on the stack above Field of Ruin's second ability and get to resolve before it (C.R. 405.2, 116.4). However, although activating the Field of Ruin ability this way technically gives you priority back under the comprehensive rules (C.R. 601.1a), things are different in sanctioned tournaments: there, a "player [that] adds an object to the stack [is] assumed to be passing priority" unless they state they retain it (M.T.R. 4.1; see also C.R. 720.1c).
All players must pass in a row before a spell or ability on the stack (including Field of Ruin's and Azcanta's second abilities) resolves (C.R. 116.4), and only the top spell or ability resolves this way, not everything on the stack at once (C.R. 116.4). This is true in general regardless of whose turn it is.
In this scenario, after Azcanta's second ability resolves, the active player gets priority (C.R. 116.3b).

My reason for asking is I might want to tuck away something with Commit // Memory and I don't want them to be able to take it with the azcanta activation. From the way I'm reading this response I should be able to do that and have it work out the way I want, correct?

What strategy are you intending to do in this scenario? Note that Field of Ruin and Azcanta are both lands, so can't be targeted by Commit.
In any cast, if you cast Commit right after activating Field of Ruin's second ability, you have to target a "spell or nonland permanent", if possible, right then and there (C.R. 601.2c, 114.1a) — and you didn't mention any permanents other than Azcanta and Field of Ruin (which are both lands) in comment 1. You can't target any permanents that have yet to enter the battlefield. If you cast Commit this way, your opponent will still (eventually) get priority to activate Azcanta's second ability before Commit resolves (C.R. 602.1i, 116.3d, 116.1a).

What I want to do is cast Commit // Memory on the spyglass and then shuffle it away with a field of ruin activation. What I want to do is use field on their azcanta, they activate in response, after that activation resolves I commit the spyglass (while the field of ruin activation is still on the stack), the spyglass gets tucked away then field of ruin shuffles their deck.

This is a viable line of play. However you should be aware that if they choose not to use Azcanta you will miss your opportunity to cast commit before field resolves. Make sure you properly communicate what is happening with the opponent and do be afraid to call a judge these types of timing plays often confuse players and make them feel cheated so proper communication so there is no confusion as to what and when you are acting is important.
