So I have a Rowan Kenrith emblem, which copies activated abilities.
I'm hoping to get infinite turns, but it all comes down to a couple of interactions.
When I activate Magosi, the Waterveil "{U}, {T}: Put an eon counter on Magosi, the Waterveil. Skip your next turn." I'm assuming I'll get two eon counters, but will I skip two turns, or one? What does "Skip your next turn." actually mean in the face of extra turns?
-OR-
Could I respond before the copy of the activation, to untap Magosi, the Waterveil with Deserted Temple and use the "{T}, Remove an eon counter from Magosi, the Waterveil and return it to its owner's hand: Take an extra turn after this one.", so I'll get two turns, and then because the land returns before the second eon counter goes on, the copied eon counter activation fizzles because the land is not there?
I feel like I'm contradicting myself, as the same rule would apply to taking the extra turn, as the land gets returned.

You get two eon counters and will skip two turns, wether those would be extra turns or not. The next two times you'd have a turn, you skip it.

You can respond in between the two activations (copy and original) resolving. But the original activation doesn't fizzle because there are no targets, it will simply do as much as possible. It cannot put an eon counter on the now nonexisting land, but it still can make you skip a turn.

You will skip two turns in a row.
"Skip your next turn" is a replacement effect, so it only applies when a turn of yours would begin. It doesn't do anything like pointing to a future turn and say "there's the one that will be skipped", it just waits for a turn to begin.
Once a turn is skipped, any other replacement effect also trying to skip that turn can't be applied, so that effect waits for the next turn after that, and so on.

As the ability does not target the land, it won't fizzle just because the land is not there. And the "skip a turn" part does not start with "if you do [put an eon counter]", you still skip a turn even if the land is not there to receive the counter.
So here you have an extra turn, and two turn skips. When this turn ends, the extra turn would begin, but it is skipped. Then there's some other player(s) turn(s). When your next regular turn would come, it is skipped again. Then another round of turn(s) from the other player(s), and finally a regular turn for you.
(EDIT: forgot there was two extra turns)

He'll get two exra turns because of the emblem, and those two will be the ones to be skipped, since they would be the next two turns. In other words, the turn order will be the same as if the whole thing didn't happen.
No. There is no iteration of this that will result in you taking more turns than you skip, except activating the ability to ga8n an eon counter *before* you have the emblem, and the extra turn *after* you gain the emblem.
Skipping your next turn is part of the resolution, and you will skip as many turns as the ability resolves.
Returning the land to your hand is part of the activation cost, and so the land will be in your hand before its ability is even put on the stack.
There is no point between activating the extra turn effrct and it resolving that you can untap, or otherwise do anything with, the land.
