Sorin, Lord of Innistrad is in play and he has put out his emblem. Thopter Foundry and Sword of the Meek are also in play. I activate the foundry, sac’ing the sword. Does a 1/1 critter come into play and trigger the sword returning from the graveyard, or is it a 2/1 upon entry?
I assume you control all the permanents you mention and control the Sorin emblem.
Each Sorin emblem gives creatures you control +1/+0. Thus, with one Sorin emblem, a creature that's otherwise 1/1 and that would enter the battlefield under your control would be 2/1 from the first moment it's on the battlefield (C.R. 613.4, 613.1, 613.1g, 613.3c; under C.R. 603.6b, a "permanent is never on the battlefield with its unmodified characteristics"). Thus, such a creature won't be counted as a 1/1 creature by Sword of the Meek's last ability, which checks the state of the game of the first moment that permanents enter the battlefield (C.R. 603.10, 603.6a).
