Tajic's second ability will trigger only if Tajic and at least two other creatures are declared as attackers (C.R. 508.1m). Creatures that enter the battlefield attacking, without being declared this way, don't count, even if as a result Tajic and at least two other creatures are now attacking creatures (C.R. 508.4). In any case, although Brimaz's second ability will trigger when Brimaz attacks, it won't do anything right away (C.R. 603.2); rather, like most other triggered abilities, it has to go on the stack (C.R. 508.2, 116.5).

No, Tajic's ability wouldn't trigger in this situation.
For his ability to trigger you need to declare him and at least two other creatures as attackers. The cat token created by Brimaz is not declared as an attacker, it is just put into play attacking. And is only put into play when Brimaz's ability resolves, which is long after Tajic's ability had the chance to trigger.
Also for Tajic's ability you need to attack with and AT LEAST two other creatures. Which means you need to attack with Tajic and two OR MORE other creatures.
For Tajic's ability to trigger (not activate, only activated abilities can be activated) you have to declare him and at least two other creatures (so two or more) as attackers during the declare attackers step's turn based action. It will not retroactively trigger if you get that third attacker later during the turn, like with Brimaz.

No. No matter how you get additional attackers after the declaration of attacker is over, you will NOT get the trigger. Only declaring at least three attackers, one of them Tajic, as attackers in the normal way will trigger the ability.

Sure enough, a creature which attacks becomes an attacking creature.
But creatures may be attacking and yet never have attacked! They may have appeared in combat already attacking.
Tokens created by Brimaz are attacking but they never attacked.
Only those creatures you picked during Declare Attackers Step do attack. Those, and only those, will trigger Tajic.
Similar rules apply to block/blocking.
Rule 508.3a: An ability that reads “Whenever [a creature] attacks, . . .” triggers if that creature is declared as an attacker. [...] Such abilities won’t trigger if a creature is put onto the battlefield attacking.
