The way that Storm the Vault is worded, it sounds like if I were to deal combat damage to ONE player with ONE or more creatures, I would create a treasure. If I hit, for example, three opponents with a creature would I get three treasures? Thanks in advance; making a Reaper King EDH.

Yes, you understand correctly. The trigger goes off for each player that your creatures are dealing combat damage to. So if you hit multiple players you get multiple treasures.
Storm the Vault's first ability will trigger each time "a player" is dealt "combat damage" by "one or more creatures you control" (C.R. 603.2, 603.2c; see also this thread). Thus it triggers three times if the same creature you control deals combat damage to three different players (not just opponents) simultaneously (C.R. 102.1), but only once if three creatures you control each deal combat damage only to the same player simultaneously.
Note that Commander is a variant that's independent of the multiplayer variants and options in effect in the game; nothing in the rules for that variant (under C.R. 903) explicitly precludes applying those rules to two-player games (C.R. 903.2).
