I assume that by "threat" you mean menace. I assume that by "raising" a creature you mean destroying a creature.
With these assumptions, the remaining blocking creature would still be blocking. Effects that restrict blocking (such as menace [C.R. 702.110b]) are relevant only at the moment blockers are declared as the declare blockers step begins (C.R. 509.1b-c), and not at any other time. Thus, removing one of the blocking creatures from the battlefield in this case would not remove the other from combat (C.R. 506.4a).

I use 2 creatures to block an attacking creature.
They unsummon one blocker.
Is my remaining creature still blocking, since the attacker has Menace?
The answer being 'Yes, the remaining creature still blocks the attacker, even with Menace'
because of this rule:
509.1g Each chosen creature [...] becomes a blocking creature. [...] It remains a blocking creature until [...] the combat phase ends [...]
