You get to choose a creature type for the copy of AA, the choice of the original is not copied. When the CE is about to enter the battlefield, its own replacement effect is applied to the event, and it enters as an Arcane Adaptation. Then, since it would now enter as an AA, that one's replacement effect applies, and you choose a creature type. Then, since there are no more replacement effects applicable, the CE enters the battlefield as an AA with its own chosen creature type.
If you copy AA with Clever Impersonator, yes, the saem principle applies. It becomes a copy of AA as its own replacement effect is applied, then you choose a creature type for it as the AA replacement effect of its newly gained ability is applied.
