I was curious about the specifics of the "from anywhere" part of the alternative cost of the card Ravenous Trap. Does that include literally anywhere such as I bolt my opponent and the bolt goes to the graveyard, does that count towards the three for them to cast the trap for free?

"From anywhere" means what it says: Ravenous Trap cares whether cards went to opponents' graveyards from anywhere this turn, not just from the stack (as is the case for an instant or sorcery spell when it finishes resolving [C.R. 608.2k]), and not just from the battlefield.
Yes. "Into the graveyard from anywhere" means a zone change from any zone to the graveyard. This can be the hand (eg. discard), library (eg. milling), exile (eg. processors), battlefield (eg. destruction), or the Stack (eg. spells resolving).
You can cast Ravenous Trap any time you could cast any other instant spell, namely any time you have priority, even during an opponent's turn (C.R. 116.3d, 116.1a). Note that Ravenous Trap's first ability doesn't restrict when it can be cast, but rather enables an alternative cost if certain conditions are met (C.R. 117.9).
Note also, however, that the active player draws a card as the first thing that happens in a draw step (not: draw phase) (C.R. 504.1); it's not before that happens that players get priority during that step (C.R. 504.2). And that card draw can be replaced if a card with dredge is in that player's graveyard while the required number of cards are in his or her library (C.R. 702.51a, 112.6k).
Not sure I follow. When his draw step is over, he retains priority right? Would he be able to drop a land before I get priority?
In general, the draw step (as with other steps where players get priority) ends only if all players pass in a row on an empty stack (C.R. 500.2); a player can't end such a step unilaterally. Thus, even if your opponent (the active player here) adds nothing to the stack and simply passes, every other player (including you) will eventually get priority to cast instant spells, including Ravenous Trap, before moving to the main phase (C.R. 116.3d, 116.4, 500.1, 501.1, 116.1a).
What are you trying to achieve? Are you trying to cast something in the main phase, or before it?
The draw step proceeds as following:
1. Active player draws a card.
2. Active player gets priority. (assuming they pass, then...)
3. Nonactive player gets priority. (assuming they pass, then...)
4. Game proceeds to next step.
If your goal is to use Ravenous Trap after they've drawn a card and before they can drop a land, you can do that. You do it in point 3 noted above.
If your goal is to use Ravenous Trap explicitly in their main phase but before they can drop a land, no, you can't do that.
