Using an exchange effect, like Djinn of Infinite Deceits on a creature you control that would be sacrificed by you at the beginning of your next end step, like being cheated into play with Sneak Attack, would keep that creature alive, because you can't sacrifice permanents you don't control. Assuming this is correct, does this have the same end result when exchanging creatures/permanents that would be exiled at the beginning of your next end step, like Inalla, Archmage Ritualist/Flameshadow Conjuring/Sedris, the Traitor King? Or do the they get exiled no matter what since exiling isn't the same as sacrificing in this instance?

You got the gist of it, sacrificing a permanent requires you to control it, but exiling something doesn't. With the last cards you named, the creatures would be exiled anyway.
I'm a former judge (lapsed), who keeps up to date on rules and policy. Keep in mind that judges' answers aren't necessarily more valid than those of people who aren't judges; what matters is we can quote the rules to back up our answers. When in doubt, ask for such quotes.
