When the creature enters the battlefield two abilities trigger. The Illusory Gains and the Pyromancer itself. Once each triggers a target is chosen (if it is required like with Pyromancer) by the abilities controller and then it is set. Once the ability has triggered it remains independent of the source of the trigger so whether the Pyromancer changes control or is kill or exiled the deal damage ability is still the same.

That depends on whose turn it is. Whenever two different players have abilities that trigger at the same time they are resolved with the players whose turn it is not, resolving first. Since generally people only cast creatures on their own turn if your opponents creature enters the field its ETB ability will trigger along with the Illusory Gains ability. Because it is not currently your turn your ability resolves first and you gain control of the creature entering with that creatures ability resolving after.
If it were your turn and the creature had flash for example then the creature's ETB ability would resolve first killing the targetted creature and putting Illusory Gains into the graveyard before its ability could resolve. Because it's in the GY its ability would do nothing on resolution and you wouldn't control the new creature.
