When a card like Adaptive Automaton, Metallic Mimic, or Conspiracy ask you to name a creature type, can you name a token creature type that doesn't appear on any normal cards? For instance, "saproling" is a common creature type for tokens, but WOTC has never printed a creature with the saproling type. Another instance in which something like this would appear is if you controlled Mistform Ultimus, Coat of Arms, and a saproling creature token; would they get the +1/+1 from the Coat of Arms?

Yes you can do this. There are 235 creature types listed in the current MTG comprehensive rules and you are allowed to name any one of them. For a full list you can look here http://mtgsalvation.gamepedia.com/Creature_type
The only exception to this is if one of your friend plays a changeling deck on the kitchen table and the playgroup allows him to choose silly types, like wheelchair or armpit. Otherwise, you must stick to the type listed in the comp. rules
The only rules that limit what creature types you can choose are C.R. 205.3m (which lists the creature types) and C.R. 205.3e (which limits you to only those types).
