In my graveyard is a single copy of bridge from below and in play I have an insolent neonate. I use the neonate's rummage ability and discard a second copy of bridge from below. How many zombies do I get?

In general, to pay for Insolent Neonate's activating ability, you either discard a card then sacrifice Insolent Neonate, or vice versa (C.R. 601.2h). If you discard a Bridge from Below card, then sacrifice Insolent Neonate, the discarded Bridge from Below's first ability will trigger if you own Insolent Neonate, and its second ability will trigger if an opponent owns Insolent Neonate; in the other order, neither ability from that card will trigger (C.R. 603.4). No matter which order you pay the costs, the corresponding ability from the existing Bridge from Below in the graveyard will trigger under the same circumstances.

You will get two (most likely). As long as you discard a card before sacrificing Neonate, you will get 2 tokens since the second Bridge will be in the graveyard in time to see the Neonate end up there.
Note that you can pay costs in any order so you could (if you wanted for some reason) sacrifice Neonate before discarding a card to only get 1 token.

With the update for Adventures in the Forgotten Realms, the rules changed in a manner that affects this question.
Now, while paying the costs of a spell or ability, you must first "pay all costs that do not involve random elements or moving objects from hidden zones to public zones in any order", then "all remaining costs in any order" (C.R. 601.2h). And discarding a card involves moving a card from the hand (a hidden zone) to the graveyard (a public zone) (C.R. 400.1, 701.8a). Thus, in general, to pay for Insolent Neonate's activated ability, you must first sacrifice Insolent Neonate, then discard a card (and in this case, neither ability of the Bridge from Below card just discarded will trigger in this scenario). Insolent Neonate's activated ability, though, was unfortunately printed with the costs set forth in the other order, and the Oracle text wasn't changed to avoid potential confusions that may result.
With the update for Innistrad: Midnight Hunt, the rule on paying costs was changed so that discarding a card and sacrificing a creature to pay for the same spell or ability can be done in any order again.
