So I am looking at the formats for Magicfest and it appears that at least half is modern. I was under the impression that Standard is suppose to be the premier constructed format and easiest for beginners to get into. Why is there so little standard at Magicfest level?

Likely, because up until this most current Standard, Standard was in terrible shape and Modern was far more popular.
Arena + Guilds of Ravnica (well starting with Dominaria) has helped this, but Standard really was quite bad, for quite a long time.

Its almost like monkeying with the rotation cycle and block size really hampered Standard.
Still, I think, long term, Standard will be far better off with the way the game is structured now (3 independent sets and a core set) compared to the two-set-block system, and even the three set blocks.
I think a few things have sort of hampered the popularity of standard over the past few years. First thing is that they kept changing the way rotations happened (IE from 24 to 18 back to 24 months). which made cards legal for varying amounts of time. Also people were sort of scared away from standard due to Kaladesh being relatively unbalanced, now that it's rotated people are starting to slowly make their way back to standard.
I believe they've only announced the format for a few months of Magic Fests next year and things could be subject to change so we will most likely get more standard main events.
Plus there are always tons of side events. If you have never attended a GP, no I am not calling it MagicFest, you would be surprised how many people go in order to play 3-5 four round events of other formats. Check out an event schedule for an upcoming one, regardless of where it is, and you'll see. You can play competitive REL standard at a modern main event GP.

I was always under the impression that sealed was the most beginner-friendly format.

GP Montreal this year was sealed, which I had no interest of doing so I bought the side events package (can't remember the name of it, but it was great value) , which got me entry into 6 events for maybe $200ish CAD (believe I got something like 2 events for "free" with the package)and had way more fun than I would have playing the main (again not a huge fan of playing the same sealed deck for 8ish rounds I think it would have been). I probably walked out with over three booster boxes worth of product, mostly because I 3-0d the legacy double up
