Well, first off, there are creatures in the Kaladesh block, that grant additional abilities to the vehicle that they crew. So you can accumulate more abilities with more crew. Examples are Gearshift Ace and Speedway Fanatic.
Then there are various game scenarios where you just want to tap your creatures, for example to avoid a forced block for a luring attacker like Thicket Basilisk. (Note, that once crewed, you can tap the vehicle to crew itself, too!)
